Meet your instructor Matthew “Matty” Combs

Matty has always had a passion for cooking, which began with growing up fishing in Minnesota and cleaning/fileting fish since he can remember. This early experience laid the foundation for his culinary journey.

He pursued his passion by studying culinary arts in the San Francisco Bay Area, where he honed skills and learned the intricacies of the culinary world. This education was complemented by a professional internship in Tokyo, Japan, providing him with invaluable international experience and exposure to traditional Edomae sushi techniques.

Matty's career took a significant leap when he opened and operated Kaikodo Sushi in Hilo, Hawaii. This venture allowed him to showcase his expertise and creativity, establishing a reputation for excellence in sushi preparation. 

After 15+ years working sushi counter service, Matty began slowly teaching classes to small groups, which eventually became a regular weekly event.
